Processing Type: Naturally processed. Coffee cherries are dried on patios or raised beds in the sun. To prevent spoilage, they are raked and turned throughout the day, then covered at night or during rain. This process, which can take 4-6 weeks, gives the coffee its beautiful flavor clarity, resulting in a satisfying and refreshing cup.

Guji Hambela Anaerobic G1

Variety: Native Heirloom
Processing Type: Cherries are first immersed in water tanks to remove low-density beans.
They are then sealed in airtight, controlled fermentation tanks with regulated valves to ensure no oxygen enters. The fermentation lasts 7 days, with a target pH level of 3.8 to achieve a profile of winey, dry fruit, juicy, and rich floral flavors. Tanks are placed in concrete water baths to maintain a constant temperature of 15-18°C, ensuring slow fermentation.
The process is homogenized by rotating or moving the tanks.
After the seventh day, cherries are removed, and quick drying is applied on day one until coffee humidity drops to 35%.
Cherries are dried for 30 days under shade nets on African beds. Once dried to 12% humidity, cherries are stored in a conducive warehouse for four weeks of resting.
